I would recommend fiber, but to do it correctly / by a company who runs underground/direct burial fiber is going to be the most expensive option.
If you're over the 328ft distance limitation of Ethernet, there are other alternatives to fiber that *may* be cheaper/adequate...
- VDSL pair, basically your own DSL circuit between buildings, only requires 1 pair of POTS (phone quality) wire, and you get Ethernet out at each end
